Sloppy Joe’s are always called a childhood favorite but, grown-ups love them, too. They are filling but simple, and can also be low in fat and cholesterol. Serve this messy sandwich with oven fries and sweet corn for a full but meatless meal.
Vegetarian Sloppy Joe
Soy ground meat is not an exotic ingredient. You can find it in the freezer section of most grocery stores. Brands like Boca and Morningstar farms are delicious and have a more ‘beefy ‘taste. If you can’t find the ground soy meat, just buy the plain veggie burgers (no cheese or veggies inside) and cook them in the microwave before making your sloppy joe.
4 whole wheat buns
2 cups Soy Ground “Beef”
2 tablespoons of mustard
2 tablespoons of ketchup
1/2 cup of chopped peppers
1/2 cup of chopped onions
3 tablespoons of vegetable oil
Preheat oven to 200°. Wrap the buns in aluminum foil and toast in the oven until they are toasted. Heat all of the vegetable oil in a frying pan. Add 2 cups of Soy “meat”. Also add the onions and peppers. Cook until onions and peppers are soft. Add mustard and ketchup. Mix this together in the pan and turn off the heat. Divide the Sloppy joe evenly among the four buns. Pile it on thick because they are supposed to be messy.
Serve piping hot. If you have to eat yours with a knife and fork, then you know you have done it right.
